Oil
1 carrot, peeled and shredded

Ener-G Egg Substitute for 1 egg, beaten
1/4 tsp salt
Pinch of pepper
Cracker meal or fine breadcrumbs (low carbers, use some low carb bread crumbs here)

Cook cauliflower in a little water until tender. Drain.
Put into a large bowl, and mash well. Set aside.
In a frying pan, saute` onion and carrot in a little oil until soft.
Add to mashed cauliflower in bowl. Cool.
Add egg sub, salt, and pepper. Mix well.
Add just enough cracker meal so that the mixture can be formed into patties that will stay together
(not too wet or too dry).
Form mixture into burger-shaped patties.
Arrange patties on a sprayed baking sheet.
Bake at 300 F for 10 minutes.
Turn, and bake another 5 minutes.
Cool in fridge.
Put patties between sheets of wax paper, and then into ziplock bags.
Freeze patties until needed.
To Heat and Serve:
Reheat in oven at low temperature until just hot throughout.
Or panfry in a sprayed frying pan until just hot throughout
Or microwave about 2 minutes, turning over after 1 minute.
Try the following
CAULIFLOWER BURGERS
2 cups chopped cauliflower
1 cup chopped onion
2 cloves garlic minced
1/2 cup walnuts
1/2 pound firm tofu
1 teaspoon sea salt
1/2 teaspoon finely ground pepper
1 teaspoon paprika (I always use sweet Hungarian paprika)
1/2 cup wheat germ
2 Tbs. nutritional yeast (health food stores have it, and it is good sprinkled on salads too)
Steam the cauliflower for 5 minutes. Then finely chop in a food processor.
Combine with the chopped onion.
Preheat the oven to 350掳.
Finely chop the garlic and walnuts in a food processor and mix with cauliflower and onions. Still using the food processor, blend tofu, salt and pepper. Now mix everything you have chopped together.
Then add the wheat germ and nutritional yeast and form into patties. Arrange on an oiled baking sheet. Bake for 15 minutes on each side until browned.Does anyone have a recipe for Cauliflower Burgers?

Here is the "fries" I make with my veggie burgers
Zucchini, cut in half horizontally...
scoop out the seeds
cut up like fries
preheat oven to 450 degrees F
place a small amount of oil (or cooking spray) on cookie pan
sprinkle with salt, pepper and curry powder
or your fave spices and herbs, toss to coat
bake until crisp and golden, flip and cook the other
side.
Why? When there so many tasty lovely wholesome burgers are out there? Some really good meaty full flavour burgers, yummy.
