Fish n' Chip Shop Menu...?

I am moving to England on a work visa, and am opening a chippy. I want a traditional menu, not burgers, kabobs, etc. that i see so much, but a traditional, old fashioned shop. Can anyone give me some suggestive foods to put on my menu? It's a small place, and i want a small, quaint, menu. I would prefer suggestions from uk citizens. What would you guys like to see on a menu?Fish n' Chip Shop Menu...?
Well what you traditionally get depends on whether you live in the north or south of England. I live in Yorkshire, in the north. We traditionally have chips (obviously); the fish are usually cod or haddock but there's a big push at the minute to use more sustainable British species like pollock, coli and haddock; mushy peas is a must; curry sauce; gravy.Fish n' Chip Shop Menu...?
Cod

Haddock

Plaice

Hake

Scampi

Regular chips

Large chips

Mushy peas

Bread roll %26amp; butter

Pickled onions

You can also serve sausages (most chippys do) and a pie such as steak and ale pie. If you serve these things you can also sell gravy to go with them.

Ethically sourced fish would be a great selling point, as would locally sourced, fresh, and organic ingredients.

There has been a big campaign on British television to promote new fish groups and protect cod, haddock and tuna from overfishing. You can watch the programs here:
